Barbacoa. Sunday ain’t the same without it.

I’m visiting Matamoros right now and every time I come to visit my in laws,  barbacoa is a must on Sunday.  Usually we get a kilo worth of it. Who can pass on slow roasted cheek meat or depending where you get it, the meat in back of the eye sockets.  The best barbacoa is the one you can find where the whole cow head is wrapped in leaves and thrown in a pit on the ground to cook for several hours.  You can find some of the best tasting barbacoa in “el mercadito” in Matamoros, make sure wake up early at 5am to get it.  Corn tortillas, cilantro, diced onions,  limones, and green salsa,  and a dash of salt.. You can’t go wrong with that.  If you haven’t tried barbacoa, you’re missing out in life.
